Easy Blueberry Cheesecake Bars

Ingredients
  

Crust

  • 1 1/4 cups graham cracker crumbs
  • 2 tablespoons sugar
  • 4 tablespoons melted butter

Filling

  • 16 ounces cream cheese full-fat block variety
  • 2 large eggs
  • 2 tablespoons lemon zest finely grated
  • 1/4 cup fresh lemon juice
  • 1/2 cup sugar

Topping

  • 1 1/2 cups blueberries fresh or frozen
  • 1 cup packed light brown sugar
  • 3/4 cup all-purpose flour
  • 6 tablespoons unsalted butter cold

Instructions
 

  • Preheat the oven to 350°F (175°C). Prepare a 9x9-inch baking dish with parchment paper.
  • Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the prepared baking dish.
  • Prepare the filling: Beat cream cheese until smooth. Add eggs, lemon zest, lemon juice, and sugar. Mix until combined.
  • Spread the filling over the crust. Top with blueberries and sprinkle with brown sugar and flour mixture.
  • Bake for 40 minutes, or until the edges are set and the center is slightly jiggly. Let cool completely.
  • Refrigerate for at least 4 hours before cutting into bars and serving.

Notes

For the best results, use fresh blueberries and ensure the cream cheese is at room temperature before mixing.
