38 ozcream cheese packages, softened to room temperature
3/4cupgranulated sugar
3eggs, at room temperature
2tspvanilla extract

Instructions
Preheat oven to 350 degrees. Prepare graham cracker crust by mixing crumbs, sugar, vanilla extract, and melted butter. Press mixture into a baking dish and set aside.
Beat cream cheese until smooth. Gradually add sugar, vanilla extract, and eggs, mixing until silky and smooth.
Pour cheesecake batter over the crust and bake for 22-25 minutes, or until the center jiggles slightly.
Let cheesecake cool in the oven for 45-60 minutes, then finish cooling on the counter.
Chill cheesecake in the fridge for at least 4 hours or overnight before serving.
Cut, serve with desired toppings, and refrigerate leftovers.
