Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 4 Tbsp granulated sugar
  • 6 Tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 3 8 oz cream cheese packages, softened to room temperature
  • 3/4 cup granulated sugar
  • 3 eggs, at room temperature
  • 2 tsp vanilla extract
  • berries optional topping
  • caramel sauce optional topping
  • chocolate chips optional topping
  • lemon curd optional topping
  • whipped cream optional topping

Instructions
 

  • Preheat oven to 350 degrees. Prepare graham cracker crust by mixing crumbs, sugar, vanilla extract, and melted butter. Press mixture into a baking dish and set aside.
  • Beat cream cheese until smooth. Gradually add sugar, vanilla extract, and eggs, mixing until silky and smooth.
  • Pour cheesecake batter over the crust and bake for 22-25 minutes, or until the center jiggles slightly.
  • Let cheesecake cool in the oven for 45-60 minutes, then finish cooling on the counter.
  • Chill cheesecake in the fridge for at least 4 hours or overnight before serving.
  • Cut, serve with desired toppings, and refrigerate leftovers.

Notes

Let the cheesecake cool slowly to prevent cracking.
