Instructions
Combine graham cracker crumbs and melted butter, press into a 9-inch springform pan, and refrigerate to set.
Beat cream cheese until smooth, add powdered sugar and vanilla extract, and mix well.
Whip heavy cream until soft peaks form, then fold into cream cheese mixture until combined.
Spoon filling over crust, smooth with spatula, cover, and refrigerate for at least 4 hours or overnight.
Remove from pan and garnish with fresh berries, chocolate sauce, or whipped cream.
Notes
For best results, allow the cheesecake to chill overnight. Garnish with fresh berries for a light and refreshing finish.
