Ingredients
  

  • 3 cups all-purpose flour
  • 3 cups granulated sugar
  • 1 1/2 cups unsweetened cocoa powder
  • 1 tablespoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 4 large eggs
  • 1 1/2 cups buttermilk
  • 1 1/2 cups warm water (or brewed coffee) (or brewed coffee)
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 1/2 cups butter (softened) (softened)
  • 8 ounces cream cheese (softened) (softened)
  • 1 1/2 cups unsweetened cocoa powder
  • 3 teaspoons vanilla extract
  • 7 cups powdered sugar
  • 1/4 cup milk (as needed) (as needed)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • In another bowl, combine eggs, buttermilk, warm water, oil, and vanilla extract. Pour into the dry ingredients and mix until smooth.
  • Pour batter into prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  • For frosting, beat butter and cream cheese until smooth. Add cocoa powder, vanilla, and powdered sugar, mixing until combined. Add milk as needed for consistency.
  • Once cakes are cool, spread frosting on top of one layer and sandwich with the second layer. Frost the outside and serve.

Notes

For a deeper flavor, use brewed coffee instead of warm water in the batter.
